Peanut Butter and Apples are my FAVOURITE snack lately. Add some raisins, chocolate chips or shredded coconut to apple slices covered in peanut butter – so good!
PB&J Sandwiches will never go out of style, but I just don’t really enjoy them as much.
Perfect timing for me to make Peanut Butter, as I have about 1 spoonful of my store bought stuff left!

I chose to NOT soak my nuts, and added the Coconut Oil at the same time as the peanuts rather than after the initial blend.
2 Cups Peanuts
1 TBSP Coconut Oil, melted
Toast peanuts over medium high heat for about 5 minutes on the stove stirring constantly. Place nuts into food processor and add Coconut Oil.
Blend on Low for about 2 minutes then stir and blend another 1 or 2 minutes until smooth.
This should be stored in the fridge, as the nuts may go rancid if kept at room temp.
